Vines Verdeca ( %)

Color: Bright straw yellow, with strong and brilliant greenish reflections.
Smell: The nose expresses intense hints of flowers and fresh white fruits.
Taste: On the palate it is balanced, fresh and savory, with a good aromatic persistence.
Food pairing: Ideal as an aperitif, but also for first and second courses based on fish, molluscs and crustaceans. Try it with medium-aged cheeses.

Production area: Tenuta Castel Serranova, Carovigno (BR).
Harvest: Manual in boxes in the first ten days of September.
Vinification: Destemming-crushing, soft pressing, fermentation at a controlled temperature in temperature-controlled steel tanks for 10 days.
Aging: On the fine lees for two months.
Product stabilization: Cold static, microfiltration.
Refinement in bottle: 3 months.


Agricole Vallone

Agricole Vallone represents one of the historical companies of the Salento area and sees its foundation in 1934. Today run by the young Francesco Vallone (Managing Partner) the company extends over a total of 660 hectares of land, of which 161 are vineyards and the remaining are olive groves and agricultural areas. The vineyards are in the province of Brindisi and divided into 3 estates Castel Serranova in Carovigno (with certified organic agriculture); Iore in San Pancrazio Salentino and Flaminio in Brindisi. Agricole Vallone can count on the great competence and talent of the oenologist Graziana Grassini. The greatest efforts of the Vallone today are to rediscover the autochthonous vineyards of Salento and for a few years the new production of Susumaniello vinified in red and rosé of the Ottavianello in red. The wine that made the company glorious is the Negroamaro "Graticciaia" which stands on the highest step, a wine that always gives great emotions and capable of lasting over time.
