In the Ladin language - that originally spoken in South Tyrol - mimuèt means "according to my tastes". Convinced as we are that South Tyrol offers the best conditions for growing Pinot Noir, we dedicate a lot of passion to this grape variety, and our aim is to obtain wines characterized by a precise profile, lightness and refined structure. To achieve all this, we assemble the grapes from various vineyards, all located in cool locations, carefully choosing the time of the harvest, when the berries are still crunchy and have a lively taste, so as to produce a Pinot Noir with outstanding qualities of freshness and vivacity.

Origin: Missiano (Appiano) and Pochi (Salorno)
Altitude: 370 - 520 meters above sea level gravelly, calcareous and morainic soils, clayey in the upper layers

Fermentation: spontaneous maceration
Refinement of the wine: malolactic fermentation partly in steel, partly in wooden barrels and partly in cement tanks
