Schiava is an indigenous grape variety that until the 1970s played a dominant role in South Tyrolean viticulture, so much so that, until then, South Tyrol was considered an area for red wines. Since its grapes prefer shade, for Schiava we continue to grow it in a pergola.
The wine obtained from it stands out for its freshness, lightness and tannic softness, has a moderate alcohol content, and is therefore an ideal combination for light dishes.

Production areas: Selected vineyards in Caldaro and Cortaccia.
Altitude: 300-400 meters a.s.l.
Soil: gravelly and very calcareous soils.
Age of vines: 34-74 years.
Harvest: early-mid-September.
Vinification: Fermentation and maceration in steel.
Aging: Malolactic fermentation, cement tanks (about 6 months).
Acidity: 4.5 g/l.
