Territory: Salento is identified by three climatic elements: the sun, the creator of generous sugar levels, the sea, responsible for the minerality of the wines, and the wind that makes this territory naturally free of diseases and particularly suitable for the production of "natural" wines . Characterized by extensive flat areas and modest hills, Salento is geologically made up of a medium-textured limestone structure.
Grapes: Verdeca is an autochthonous white grape variety from Puglia, with greenish hues that suggest its name. Elegant, mineral and with great vigor.
Vinification: Soft pressing to preserve the fruity and floral taste. After a cold maceration cryo, about two weeks of slow fermentation at low temperatures follow to better express the peculiar olfactory notes. After three months at rest in steel, it is bottled.
