TERRITORY Salento is identified by three climatic elements: the sun, the creator of generous sugar levels, the sea, responsible for the minerality of the wines, and the wind that
makes this territory naturally free of diseases and particularly suitable for the production of "natural" wines.
Characterized by extensive flat areas and modest hills, Salento is geologically
made up of a medium-textured limestone structure.

GRAPES Verdeca is an autochthonous white grape variety from Puglia, with greenish hues that suggest its name. Elegant, mineral and with great vigor.
VINIFICATION Soft pressing to preserve the fruity and floral taste. After a harvest advance of about 15 days and a soft pressing at 50%, about three weeks of slow fermentation at low temperatures (15 °) follow. Second fermentation directly in the autoclave on the lees and cold bottling (-1 °).
