Breeding system: Simple Guyot.
Viticulture: Pruning, mechanical plowing, no use of fertilizers or herbicides, only organic soil enrichers.
Harvest: Manual, thinned out in small plastic crates.
Vinification: Rigorous selection of the bunches, partly de-stemmed, alcoholic fermentation using only natural yeasts, with pumping over at a controlled temperature.
Aging: 18 months in oak barrels; 1/3 in new wood, 1/3 in second passage wood, 1/3 in third passage wood.

Arnaud Mortet

Domaine Denis Mortet was founded by Charles Mortet in 1956. As was common then in the Burgundian tradition, the grapes produced by his company were mostly sold and not vinified. It was with the advent of his son Denis and his wife, Laurance, that the company, in 1978, began to bottle and sell the wine produced directly. In 1993 Denis Mortet took over the winery and renamed it with his own name: Domaine Denis Mortet. At that time the company consisted of 4.5 hectares of vineyards located in the municipalities of Gevrey-Chambertin, Chambolle-Musigny and Vougeot. Today the Domaine Denis Mortet property has 11.2 hectares of vineyards worked since 1996 without the aid of herbicides and chemical fertilizers: in the wake of his father's teachings, Arnaud Mortet leads the vineyards inspired by the principles of organic farming. The first recognition of the work of the Domaine Denis Mortet came in 1995 when the Revue du Vin de France named Denis Mortet the best producer in France. From 2000 until his death, Denis Mortet was supported in the management of the company not only by his wife Laurance but also by his sons Arnaud and Clémence. The will of the Mortets is to faithfully express with their work the close complicity between the vineyard and nature. The brothers Arnaud and Clémence Mortet, at the helm of the historic Domaine Denis Mortet, inaugurated their new winery with the 2016 harvest called Domaine Arnaud Mortet. The new domaine started by including to their possessions another 4 hectares of vineyards present in the production areas of Gevrey-Chambertin and Charmes-Chambertin. Both the historic Domaine Denis Mortet and the new Domaine Arnaud Mortet use the same group of collaborators and the wines of the two companies are produced following the same quality standards. Also in the Domaine Arnaud Mortet, the sons of Denis, Arnaud and Clémence, have chosen to perpetuate the management and production philosophy learned from their father by seeking elegance and great pleasure in the wines produced.
