Second fermentation: It takes place with the traditional traditional method.
Disgorgement: 2019. The disgorgement operation is carried out after a maturation of the wine in contact with the yeasts for at least 60 months.

It is in 1872 that the ancestor Francesco Balter bought the property, managed subsequently by the brothers Attilio and Francesco, restored for the first time after the First World War (silver medal of the Ministry of Agriculture) and a second time in third generation by his son Francesco, a graduate in Agricultural Sciences, after the Second World War as it is located in the borderland and used by German troops as anti-aircraft (Flack) given the strategic dominant position on Vallagarina, then Austrian territory. Following the marriage to Lucia Colombo in 1949, for family choices, Francesco assumes the conduct of a commercial activity in the field of rugs, carpets, various floors, remaining his agricultural passion anchored to the sole management of the family business. After 1965, following the transformation of the property from direct tenancy, the vineyards were replanted with criteria of technical and geometric rationality, so much so as to create a vineyard called "garden", whose grapes were sold or transferred to various winemaking cellars . From that moment on, the care of the vineyards is in continuous and constant development. The Balter countryside is located 350 m above sea level on the top of the hill behind the city of Rovereto. The ten hectares of vineyards are all merged and an ancient drywall defines the original property of the structure. The position is optimal for wine production as, despite being on the high ground, it enjoys a level situation thus facilitating work in the countryside. The southern exposure of the vineyards allows them to enjoy the sun's rays from morning until sunset without the obstruction of the surrounding mountains. The company is in fact in the middle of Vallagarina, a large valley in the southern part of Trentino, which also benefits daily from the influence of the nearby Lake Garda thanks to the wind that goes up the valley every afternoon blowing from south to north, the Ora del Garda. The vineyards originally more focused on red varieties such as Cabernet Sauvignon and Schiava over time have seen the introduction of white berried vineyards. Over the years, different varieties have followed one another, reaching the current definition in existence since the 90s with the maintenance of old vineyards and the introduction in those years of others. Today the attention is paid to Chardonnay and Pinot Noir used for the production of the classic method, Lagrein, Merlot and Cabernet Sauvignon for red wines and Sauvignon for white.
