WINE

The base wines of the Cuvée Prestige are obtained by applying a rigorous vinification protocol. The hand-picked grapes are codified vine by vine, cooled in the cell and, before being pressed whole, are selected by expert eyes and hands. Alcoholic fermentation takes place in temperature-controlled steel tanks, where the wines remain until the following March. Seven further months of aging are necessary for the wine to become clear, mature and make the character of the vineyards of origin emerge. Subsequently, the wines are expertly assembled with noble reserve wines of the best vintages (from 20 to 30%) in the "magic rite" of the creation of the cuvée. This particular technique gives the Cuvée Prestige a strong personality. The essence of Ca 'del Bosco-style Franciacorta. Only after an average aging on the lees for 25 months can this Franciacorta express all its richness and identity. The dégorgement takes place in the absence of oxygen, using a system unique in the world, conceived and patented by Ca 'del Bosco. This avoids oxidative shocks and further additions of sulphites, making our Franciacorta purer, more pleasant and longer lasting. Finally, each packaged bottle is uniquely marked, to ensure traceability.
