Climate: The 2017 vintage, characterized by a dry and mild winter, led to an early budding of the vine. Both spring and summer were hot and dry, marked by a total absence of rain. Torrid temperatures affected the entire month of August, leading to an early harvest, which began for some Merlots around August 20th. The climatic conditions have led to a significant reduction in production while ensuring excellent quality of the grapes.
Harvest: The harvest began on August 20 for a part of the Merlot, and then ended in the third decade of September for our latest variety, Cabernet Sauvignon. The grapes were harvested by hand and placed in 12 kg crates, with separate collection by variety and plot.
Vinification: A careful selection of the grapes preceded the destemming, followed by the maceration phase in stainless steel vats at a controlled temperature. In this phase, alcoholic fermentation began, which lasted for about two weeks, followed by racking and malolactic fermentation. After 18 months of aging in barriques, the individual batches were blended and the wine was aged for a further 6 months in the bottle.

Caccia al Piano

Tenuta Caccia al Piano 1868, formerly a hunting fief of the noble Della Gherardesca family, is immersed in the enchanting territory of Bolgheri. Here the perfect combination of Mediterranean microclimate and clay / limestone soils gives the ideal terroir for great wines. Along the suggestive Via Bolgherese, which runs between vineyards and olive trees, the oenologist Franco Ziliani has started a new adventure by dedicating himself to the production of wines that leave their mark. A story that began in 2003 and made of passionate commitment that is transformed, harvest after harvest, into fragrant, full-bodied and elegant nectars. In the land that inspired the poet Giosuè Carducci, the care of nature, the wisdom of the gesture, the love of knowledge mark time and shape the landscape. The Caccia al Piano 1868 vineyards cover 19.5 hectares and are divided into three crus: Caccia al Piano, Le Grottine and San Biagio. The exposure of the rows and the characteristics of the natural environment allow to reach the best expressions of the Cabernet Sauvignon, Merlot, Syrah, Petit Verdot and Cabernet Franc varieties. The vines are cultivated with high density double spurred cordon, 9000/10000 vines per hectare, and conducted according to the strict rules of eco-sustainable viticulture. The harvest is exclusively manual.
