Vinification: Obtained by bleeding after about 6-8 hours of cryomaceration, fermentation at controlled temperature avoiding to exceed 16 °C.
Pouring post-fermentation and aging on the fine lees with repeated bâtonnage. A light filtration before bottling to ensure its brilliance.

Cantine Madonna delle Grazie

he Cantine Madonna delle Grazie company was born in Venosa in 2003 with an ancient history behind it, which starts from the great-grandparents of the current producers, Giuseppe Latorraca and his sons. The winery takes its name from the 16th century monastic complex of the same name which stands near the winery. In full Vulture, therefore volcanic tufaceous soils, the company cultivates 8 hectares parceled in 4 districts with different soil and climatic characteristics and altitudes varying between 400 and 550 meters. The will of the company is to create wines with elegance compared to those of the past, not forgetting the tradition, but also evolving, making less fat, fresher and highly pleasant wines.
