In the Eggplant rolls, the aubergines, coming from the Carlino fields, are processed in season. At first they are peeled manually, then they are sliced and acidified. For this reference, only the central slices are used, which are trimmed in rectangular shape by hand, one by one. Once stuffed with quality tuna and capers, the aubergines are rolled up, stopped with a toothpick and put in a jar with olive oil.
