In the Eggplant rolls, the aubergines, coming from the Carlino fields, are processed in season. At first they are peeled manually, then they are sliced and acidified. For this reference, only the central slices are used, which are trimmed in rectangular shape by hand, one by one. Once stuffed with quality tuna and capers, the aubergines are rolled up, stopped with a toothpick and put in a jar with olive oil.

Ingredients Rolls: Aubergines, tuna, capers, olive oil, white wine vinegar, salt, spices (parsley, mint and garlic), acidity regulator: citric acid (E330), antioxidant: ascorbic acid (E300).

Carlino la Famiglia

Keepers of taste The Carlino family of Aradeo, in Salento, knows the countryside well, has been frequenting it for over a century: there is a friendship between the company and its fields; the way the harvest takes to get into glass is short. Seasonality is respected: aubergines, tomatoes, peppers are processed in summer, artichokes and lampascioni in winter and spring. There is no compromise, because the Carlino family keeps us that, by opening its packaging, you always feel the taste of the best vegetables, transformed by taking all the time you need. To make high quality pickles, in fact, you need excellent raw materials and an accurate production process that enhances the characteristics of each individual vegetable. For this reason, the company favors traditional recipes and craftsmanship, the one that sees the manual artichokes defoliate, slice the aubergine slices one by one and "dice" the gardener's vegetables with a knife, so that they do not lose juice and taste. Passion and experience are found there, in the Carlino jar La Famiglia, which holds local fruits, capable of expressing frankly authenticity and freshness.
