Color: Intense ruby red with garnet reflections.
Smell: The nose is intense and rich with notes of spices and red berried fruits.
Taste: The palate is full and balanced with aromas of ripe red fruits and spices.
Food pairing: Perfect for meat sauces, roasted meats, cold cuts and cheeses.
The Negroamaro protected by the D.O.P. Terra d’Otranto, historical territory of Puglia that includes the provinces of Lecce, Taranto and Brindisi, expresses sensations typical of the red and deep lands and dry winds that characterize the area of the Pianura di Terra d’Otranto.
Breeding system: Spurred cordon.
Production area: Galatone (LE).
Soil: Red soil mixed with medium-textured sand, very deep soils rich in organic matter.
Harvest: Manual, in the second ten days of September.
Average production per hectare: 50 quintals.
Vinification: Fermentation in barrique of whole destemmed grapes for about 25 days, one year of aging in steel, one year of aging in bottle.
Castello Frisari
The Castello Frisari company is located in Scorrano, in Salento, the end of the peninsula of Puglia, the most south-eastern region of Italy, embraced by two seas, the Ionian and the Adriatic. Here the Guarini family has taken root since 1040, loving and cultivating this land over the centuries. Castello Frisari, home for generations, today from a name with a project with which, respecting this tradition, wants to continue to dare to voice in the territory historically required during the reign of Sicily "Terra d'Otranto" and which today includes the provinces of Lecce, Brindisi and Taranto. It was therefore chosen to enhance two areas of this land, not yet worthily represented, because marginalized by economic logics of the past that favored quantity, over quality: the agro of Ugento and the agro of Melissano in the Serre Salentine (an area of small hilly reliefs located in the extreme south of the Capo di Leuca), the Galatone countryside in the Salento plain, at the center of the Terra d'Otranto tables. Through the organic cultivation in these two plots of Negroamaro, the main grape of our wine culture, we intend to produce wines, which with low yields from a careful selection of the best grapes, best adds the typicality of these soils, through the comparison of their characteristics physiological and above all the culture of the populations that have cultivated them over the centuries.
