Vines Primitivo ( %)

Color: bright and intense ruby red.

Smell: well pronounced, complex and ethereal, with strong hints of berries in perfect harmony with balsamic notes

Vineyard: Alberello with about 5000 vines per hectare and a yield of 60 quintals per hectare

Soil: deep and dry soil with cracked tufaceous limestone rocks.

Vinification: the grapes were harvested by hand in the early hours of the morning, in the warm and sunny vineyards around
the cellar
of Castello Monaci. In the cellar the freshly pressed product is subcooled and kept cold for a few days at the
aim of preserving all the intrinsic characteristics of the primitive. Vinification, with a maceration of about 15 days, is
characterized by the use of frequent but non-invasive pumping over and by the skilful use of temperature effects:
all this gives the wine an elegant yet modern structure. The product, after malolactic fermentation it has matured for about
6 months in small oak barrels and 6 months in large barrels. Then an aging of
further 6 months in glass.

Castello Monaci

The cellar, with its shapes and its geometric rigor, since the late '70s has kept the treasure of Castello Monaci. A barrel cellar of over 1000 barriques, dug out of the same white tufaceous rock of which the deepest layer of the soil of the vineyards surrounding the Castle is composed. The cellar is equipped with modern winemaking tools, including a refrigerated pressing system with small-capacity steel tanks, double-cell thermoconditioned, to be able to vinify limited quantities of grapes separately, highlighting the peculiarities of each. Since 2000, the winemaker of the winery is Leonardo Sergio. With his experience and sensitivity he captures and selects the best that the sun and wind give us, and interprets it in its most authentic form.
