Vines Primitivo (100 %)

Color: Bright and intense ruby ​​red.
Smell: The nose is complex and ethereal, with marked hints of wild berries in perfect harmony with balsamic notes.
Taste: The palate is sumptuous and powerful, intense, balanced and rich in aromas with long persistence.
Food pairing: Ideal for structured dishes rich in taste, traditional dishes, roast meats, with sauce, first courses with meat sauces, cured meats and aged cheeses.

Vineyard: Alberello with about 5000 vines per hectare and a yield of 60 q.li/ha.
Soil: Deep and dry with the presence of fissured tuff calcareous rocks.
Harvest: The grapes were harvested by hand in the early hours of the morning, in the warm and sunny vineyards around the Castello Monaci cellar.
Vinification: In the cellar the freshly pressed product is immediately cooled and kept cold for a few days in order to preserve all the intrinsic characteristics of the primitivo.
The vinification, with a maceration of about 15 days, is characterized by a wise use of frequent but non-invasive pumping over and by a skilful use of temperature games: all of this gives the wine an elegant and at the same time modern structure.
Aging: After malolactic fermentation, the product is left to mature for about 6 months in small oak barrels and 6 months in large barrels, followed by a further 6 months refinement in glass.

Castello Monaci

The cellar, with its shapes and its geometric rigor, since the late '70s has kept the treasure of Castello Monaci. A barrel cellar of over 1000 barriques, dug out of the same white tufaceous rock of which the deepest layer of the soil of the vineyards surrounding the Castle is composed. The cellar is equipped with modern winemaking tools, including a refrigerated pressing system with small-capacity steel tanks, double-cell thermoconditioned, to be able to vinify limited quantities of grapes separately, highlighting the peculiarities of each. Since 2000, the winemaker of the winery is Leonardo Sergio. With his experience and sensitivity he captures and selects the best that the sun and wind give us, and interprets it in its most authentic form.
