Franciacorta DOCG Brut Satèn 2016 - Cavalleri

Color: Intense straw yellow with very fine perlage.
Smell: The nose is fresh and elegant, with notes of flowers and white fruits, citrus fruits and hints of pastry.
Taste: On the palate it is fresh, round and creamy, lively and balanced, mineral and persistent.
Food pairing: Perfect for fish and shellfish dishes, risotto, raw seafood, sushi and tartare.

First year produced: 1990.
Harvest period: Third decade of August.
Average production in the vineyard: 80 quintals/hectare.
Vinification yield: 50% (50 liters of wine from each quintal of grapes).
Assembly: Chardonnay (100%) of the 2016 vintage.
Vinification: Fermentation and aging in steel (75%) and large oak barrels (25%).
Tirage: March 2017.
Aging on the lees: 3 years.
Remuage: 4 week manual.
Degorgement: January 2020.
Dosage: 2.5 g/l.
Total sulfur dioxide after degorgement: 43 mg/l (legal limit 185 mg/l).

Cavalleri

The history of the Cavalleri family has roots since the fifteenth century. But like many realities in Franciacorta, production begins in the 70s. The company is based in the center of Erbusco, a renowned place in the denomination. The company, led by Giulia and Maria Cavalleri, continues to express wines rich in personality, elegant and of great quality. The property consists of 42 hectares of vineyards and a production of around 200,000 bottles. The vines are the classics of Franciacorta, among which Chardonnay stands out, grown organically, but the company tends to biodynamic. In the cellar, tradition is followed with the desire to create extremely fine and complex products.
