Harvest and vinification: The grapes coming mainly from the vineyard of the same name, are selected during the harvest and, when they arrive in the cellar, are de-stemmed, crushed and subjected to soft pressing. The must obtained ferments at a temperature of 17/18 ° C with selected yeasts.


It all started back in 1970 from the dedication and passion of a winemaker who firmly believes in his dream: to make the typical wines of Usini known and its territory with unique characteristics. Giovanni Cherchi, known as Billia, started the company in 1970 and dedicated himself to the cultivation of the two hectares of vineyards received as an inheritance. His project is very ambitious: to produce quality wines that know how to tell the strength and soul of an authentic territory. With foresight and wisdom, desire for knowledge and experimentation, the patriarch Giovanni Cherchi brings to light an ancient native grape variety, the Cagnulari. Considered a pioneer of Sardinian viticulture, not only for the rediscovery of Cagnulari but also thanks to his work to enhance the qualities of Vermentino. In fact, he was among the first to offer Usini's Vermentino with a defined identity linked to the territory. Since then, Cherchi wines have achieved great goals, receiving recognition all over the world. In the north west of Sardinia there is a hospitable country that has always been known as the "place where good wine is made". Usini is a town in the province of Sassari, nestled on the hills of Logudoro. Lands devoted to viticulture for centuries, where valleys and limestone hills alternate, in a continuous succession of vineyards, olive groves, vegetable gardens and pastures. The particular soil and climatic characteristics offer us grapes rich in body and perfumes. The sea breezes, due to the short distance from the coast, the wind and temperature changes enrich the organoleptic characteristics that are found intact in our wines. The vineyards lie on calcareous and clayey soils, at about 200 meters above sea level. The company property covers approximately 30 hectares, 60% dedicated to Vermentino, 35% to Cagnulari and the remaining part to Cannonau. The vines are grown mainly in counter-espalier with Guyot pruning system. The favorable microclimate, together with the professionalism and experience gained over time, allow a limited use of chemical and phytosanitary products, thus ensuring a high degree of quality and healthiness of the grapes. With the same philosophy of respect for nature and raw materials, the grapes are welcomed and processed in the new, modern and functional cellar, surrounded by vineyards, where the processing, conservation and bottling machinery is housed. In the underground part, carved out of the rock, the finest wines are refined in oak barrels.
