The harvest takes place in December when the grape of the Vidal variety is frozen.

During the pressing, the ice formed inside the grapes determines a strong water subtraction from the must and a higher sugar concentration.

This is how this very sweet Canadian wine is produced, with a low alcohol content.

Colio Estate Wines

Colio Estate is headquartered in Harrow, in the state of Ontario, Canada and was founded in 1980. The surface of the Colio Estate vineyards covers a total of about 80 hectares cultivated, mainly with Sauvignon Blanc, Chardonnay, Riesling for the production of white wines, Merlot, Cabernet Franc, Cabernet Sauvignon and Shiraz for the red ones. The cellar is known, in particular, for the production of the famous Canadian Icewine made with the Vidal variety: the special Harrow microclimate, due to its proximity to Lake Erie, allows an optimal ripening of the Vidal grape giving unique organoleptic characteristics. The Icewine Colio Estate is produced, as tradition, leaving the bunches to freeze naturally on the vines so as to obtain an amber and dense must with high sugar concentration. After a period of aging (95% in steel tanks + 5% in barrique) the wine has a golden color and fruity and persistent notes of apricot and pear on the nose, the aromatic sweetness of honey emerges on the finish. The Prism Vidal Icewine is produced according to the VQA Quality System (Vintners Quality Alliance) which guarantees the high quality and authenticity of Canadian wines produced in British Columbia and Ontario. This system is similar to the French AOC and the Italian DOC.
