The vinification takes place by soft destemming and maceration in contact with the skins at controlled temperatures of 28 ° C for about 25-30 days. Fermentation is at a controlled temperature of 26-28 ° C with constants pumping over and punching down. Subsequently the malolactic fermentation takes place in French oak barrels.

Etna flows in the lymph of the Cottanera vineyards which, with its frontier viticulture, represents one of the most interesting realities of the Italian and international wine scene. Those of Cottanera are vineyards that rise on the lava stone, 700 meters above sea level, along the northern slopes of the volcano, and which are screwed together with the breath of Etna becoming the mirror of a unique, precious, evocative and rich territory of charm. The name, chosen by the company, is linked to an ancient rural village that limits the family vineyards along the bank of the Alcantara river. Cottanera is a jewel of 100 hectares all merged, of which 65 are vineyards. The vineyards and the cellar are located in Castiglione di Sicilia (CT), where, therefore, all stages of the supply chain from collection to bottling take place. "To look to the future we cannot fail to take into account the education we have received. The earth, as my father taught me, is an invaluable asset, because it is the principle of everything and what we will be", this is the company philosophy that William repeated and that he wanted to pass on to his children. Guglielmo He was the first to bet on the value of those black lands. We are in the nineties when Guglielmo, together with his brother Enzo, decides to convert what was a hazelnut grove into a large vineyard, the first plants concern the international vines then, over the years, the natives, the historical vines of Etna are added : the nerello mascalese, the nerello hood and the carricante. Today, after the death of Guglielmo, Cottanera is led by his brother Enzo and the sons of its founder: Mariangela, Francesco and Emanuele.
