Smell: The nose presents floral notes of mimosa, then fruity of white and exotic fruit with a citrus touch.
Taste: On the palate it is perfectly balanced, fresh and savory, mineral and persistent with hints of honey.
Food pairing: Excellent combination for dishes based on crustaceans, molluscs and fish, also in tartare and marinades or for poultry and lightly aged cheeses.

De Sousa
Erick De Sousa is a brilliant, stubborn, and illuminated Vigneron of Champagne, considered a real example all over the world The De Sousa company has its roots in the post-war period, when the Portuguese grandfather, returning from the WWII, passing through Champagne, decided to settle in Avize. Here he founds his cellar with his son and daughter-in-law. This is now led by Erick, De Sousa's third generation. The company cultivates 11 hectares divided into various parcels scattered throughout the territories of Avize, Cramant, Oger and Mesnil-sur-Oger. The vineyards are first organic (since 2010), and biodynamic with Demeter certification since 2013. The harvest is done manually and fermentation takes place in steel or in barrique, exclusively with indigenous yeasts. The vinifications are carried out separately, thus enhancing the peculiarities of the different crus.
