Vines Chardonnay ( %)

Color: Straw yellow with golden reflections.

Production area: Bougros is located in the extreme west/south-west of the seven Grands Crus dei Chablis. This cuvée comes from the vineyard located in the highest part of the Grand Cru.

Vineyard age: about 30 years.
Vinification: Complete analysis of love left at the reception of the grapes in the cellar. Soft and slow pressing to extract the flower must. Slow alcoholic fermentation at 20 ° C on fine yeasts. Daily temperature checks during fermentation.
Maturation and aging: The wine is fermented and aged in oak barrels with regular bâtonnage, in an old vaulted cellar located in the center of our country, Milly.
The first wines of the selected grandfather already vinified here. The low temperatures of these cellars require to avoid any stabilization treatment, in fact the precipitation of tartrate crystals occurs naturally during the winter. Then the wine is bottled without filtration after 15 months of refinement.

Domaine Bernard Defaix

Bernard Defaix, with his two sons Sylvain and Didier, runs his own company following the family traditions handed down by four generations of winemakers. The Domaine extends over 25 hectares, of which 11 Premier Cru (Côte de Lechet, Les Vaillons and Les Lys), 12 ha of Chablis and 2 ha of Petit Chablis. One of the main corporate priorities is respect for the environment. It is applied at all stages of production, what Didier calls natural philosophy, for example avoiding herbicides and implementing prevention techniques such as the use of products that do not harm auxiliary insects. When necessary, some harmful insects are fought with the "sexual confusion" method, releasing capsules containing pheromones into the vineyards; airborne molecules make male insects unable to find females for fertilization, and larvae are not laid. Defaix is ​​considered one of the best producers on the Left Bank of the Serein River, an area that reserves splendid surprises especially in the hottest years. Only some Defaix wines ferment and are aged in wood (Chablis Vieille Vigne and Chablis premier cru Côte de Lechet Réserve). In other cases the barriques are used with great caution, in order to preserve the typicality of the various appellations as much as possible.
