Color: Intense and bright straw yellow with golden reflections.
Smell: The nose is rich and very complex, with intense notes of white flowers, white-fleshed fruit such as peach, honey and spicy notes.
Taste: On the palate it is full-bodied, intense, creamy, round and fresh, with fresh and mentholated aromas, silky and harmonious. Of great persistence. Long life wine.
Food pairing: Perfect for fish and shellfish dishes, poultry and white meats, dishes with mushrooms and aged cheeses.
Surface: 0.55 ha.
Exposure: North-east.
Soil: Calcareous-clayey.
Age of plants: 70 years.
Vinification: The first steps include the pressing and fermentation in French oak barrels (1/3) and the stainless steel tank (2/3).
Then follow bâtonnage and natural malolactic fermentation at cellar temperature (13-14 °C).
Aging: After 12 months of aging, the wine is put back in a tank for the preparation of the bottling.
Domaine Guy Amiot et Fils
Chassagne-Montrachet is a small village with less than 500 inhabitants. Its vineyards, together with those of Puligny and Meursault, make up the three great appellations of the white wines of Burgundy. Here some of the best white wines in the world are produced. In particular, the Grand Cru "Le Montrachet", gives a wine that is characterized by an almost incredible concentration of all the best qualities of Burgundy white: more aroma, more vivid color, stronger flavor and more persistent aftertaste. The Amiot family bought the first vineyard parcels in 1920, including "Les Dents de Chien", part of the Grand Cru Montrachet. Already in the thirties, "vinification et mise en bouteille à la propriété" was practiced in the Domaine Amiot, something completely innovative at the time. In 1995 the construction of a new cellar with elliptical vaults was completed, ideal for the natural maturation of wines, in the limestone rock of the "Les Caillerets" hill. Today the Domaine Amiot is managed by GUY AMIOT with the help of his son Thierry, witness of the fourth generation. The Domaine Amiot is considered by the international press a great reality among the best domaine of the Côte de Beaune.
