Chablis AOC 2015 - Domaine Moreau-Naudet

Color: Straw yellow with golden reflections.
Smell: The nose is elegant and delicate, mineral, it expresses great typicality, fruity notes of yellow and exotic ripe fruits and floral hints.
Taste: On the palate it is full-bodied, fresh and balanced, with long persistence with aromas of yellow fruit and mineral finish.
Food pairing: Perfect for fish and shellfish dishes, white meats and cheeses.

Domaine Moreau-Naudet

They have been producing wine on their own since 1992. The winery was purchased and expanded in 1996. This company, with its very dynamic young owner Stephane Moreau, produces typical Chablis wines. By personal choice he makes the harvest one week before the other producers. Thus he obtains fresher, even less fatty wines. They are wines with a beautiful minerality, as well as with a very interesting level of acidity and structure. The manufacturer uses only used barrique. When asked, he explains that he buys new barriques every year. In these barriques he puts the wine he sells in bulk. In this way, it takes away the flavor of new wood from the barrique. This is truly a beautiful example of a producer with a great passion for his wine. Out of respect for tradition, he uses barriques, but he doesn't want them to give flavor to his wine: in fact, in his wine he doesn't feel barrique. The company cultivates 21 hectares with a production of 95,000 bottles on clayey limestone soils. Stephane Moreau in general does not use chemicals in the vineyards; it makes use of it only if it is strictly necessary (lutte raisonnée). Its wines all have a very interesting minerality, combined with a great structure and acidity.
