Color: Dark and intense ruby ​​red.
Smell: The nose is rich and elegant, with notes of very ripe red and black fruits with spicy and toasted notes, leather.
Taste: On the palate it is full-bodied, with fine tannins, balanced and persistent with aromas of chocolate, red fruits and aromatic herbs.
Food pairing: Perfect for rich red meat and game dishes, first courses with meat sauces, cold cuts and aged cheeses.

Harvest: 8 and 9 September 2015. Selection in the vineyard and reception in the cellar.
Yield: 23 hl/ha.
Vinification: 40% of the entire harvest, not crushed and gravity cuvée. Without yeast or enzyme. Cold pre-fermentation maceration (12-15 ° C) for 5 days. One fulling per day until the middle of the fermentation, then a slight reassembly per day until the end of the fermentation. Pressing with the vertical press.
Aging: 10 months in 30% new barrels. No clarification, light filtration.
Bottling: July 26, 2016.
