Vines Riesling ( %)

Color: Straw yellow with greenish reflections.
Smell: The scent is tropical fruity in the youthful stages, with nuances towards a light vegetable that turns into mineral and hydrocarbon notes typical of this grape variety.
Taste: In mouth the entrance is full, with a nice flavor and a nice sweetness of fruit, which ends long, fresh and persistent.
Food pairing: It goes well with raw fish dishes and seafood appetizers in general, cooked fish and soups or fresh cheeses.

Exposure: South-East
Altitude: 500 - 550 m a.s.l.
Soil: silty, calcareous and very stony
Harvest period: end of September / October
Vinification: The grapes are harvested manually in boxes followed by a soft pressing and pressing. Alcoholic fermentation takes place in vertical steel tanks around 16 ° C, to then further lower the temperature, preventing the malolactic fermentation from taking place.
Aging: The wine is bottled in late spring. Thanks to the low fermentation temperature, the yeasts block their fermentation activity, leaving a sugar residue of about 5-6 g / l, which helps the varietal expression of Riesling.
