Color: Intense and bright golden yellow with amber reflections.
Smell: The nose is rich and complex with sweet notes of ripe fruit, honey, jam, apricots and sweet flowers, toasted hints.
Taste: On the palate it is soft and balanced, with a good structure, with final notes of vanilla and toasted fruit.
Food matches: Excellent combination for dry pastries and blue cheeses, or simply served as a meditation wine.
Production area: “La Torrazza” vineyard in the municipality of Borgomasino, in the Canavese area (Piedmont).
Soil: Morainic.
Harvest period: End of September.
Harvest: Manual. The grapes are arranged in small boxes so that the bunches remain next to each other.
Drying: About five months.
Vinification: In the first days of March the grapes are selected and slowly pressed. The must obtained is fermented in barrique.
Aging: 4 years, of which at least 2 in barriques.
Bottles produced: about 2,000.
Ferrando
The Ferrando family has been operating in the world of wine for five generations. In fact, the company was founded in 1890 by Giuseppe Ferrando, who came to Ivrea from Acqui with the intention of introducing Piedmontese wines to the Aosta Valley. With his son Luigi the business undertook real development. At the time the company was based in the former convent of San Bernardino in Ivrea, below the house of Eng. Camillo Olivetti. Starting from 1957 Giuseppe Ferrando, grandson of the founder, began the production of one of the rarest wines made from the Nebbiolo grape: Carema. In the town of the same name near the Aosta Valley, in 1964 the family built a cellar for the production and aging of this noble mountain Barolo (since 1967 DOC). Since then the activity has been followed with great passion and commitment by Roberto Ferrando, the current owner, who took over from father Luigi, who continuously feeds the creative momentum, the common thread of the company choices. In addition to the Carema, the pride of the Ferrando family, over the years the production commitment has extended to the entire range of Canavese wines: Erbaluce di Caluso, Caluso Passito, classic method sparkling wine, red Canavese, white Canavese, Solativo late harvest. In particular, with the rational and modern production of the latter, the company has contributed to raising Erbaluce to the rank of the best whites in Italy.
