Henri Champliau is a family winery located in Burgundy named after his grandfather.
For the Brut "Authentique", only the two noble grapes of Burgundy are used to highlight the excellence of our world-famous terroir.
Harvested by hand, the Pinot Noir grape predominates in the blend, bringing all its elegance and complexity, while the freshness and precision of the Chardonnay perfect the balance of this traditional method cuvée.

Vinification: the harvest is done manually. After the harvest of the grapes follows delicate pressing and the wines are vinified separately to be then blended. The cuvée is bottled according to the traditional method and left to refine for a minimum of 15 months.

 

Henri Champliau

Henri Champliau is a family business that produces sparkling wines in Mercurey, in the heart of the Côte Chalonnaise. Founded by Alexandre Graffard, grandson of Henri Champliau, it offers two Crémant de Bourgogne produced following the traditional method starting from the noble vines Pinot Noir and Chardonnay and two “signature cuvées”, produced with a unique Charmat method. Crémant de Bourgogne express finesse, lightness, intensity and precision, without weighing down the palate, with a final persistence that surprises aficionados. In assemblages, Pinot Noir clearly dominates, giving it power and complexity. It is a singular choice, which qualifies and identifies the character of Henri Champliau's wines, given that Pinot Noir is difficult to cultivate, its yields are low and is more easily reserved for the production of the renowned Burgundy reds. The plots of vineyards are dedicated only to the production of Crémant and the harvests are manual, with limited yields. For his Crémant de Bourgogne, Alexandre carries out gentle pressing and multiple separate vinifications in small batches before blending. Followed by the bottling for the second fermentation, for a minimum period of 12 months. The signature cuvées Pétrone 68 and Wild Miss 55 are vinified in special horizontal containers at a controlled temperature. Their shape allows to maximize the contact surface between wine and yeasts, extracting the best aromatic potential. A slow-moving propeller induces a delicate bâtonnage, which contributes to the complexity of the wines and at the same time avoids the vegetable, astringent tastes and the sour acidity of many sparkling wines. With this technique, more fruity, rich, greedy and balanced aromas are obtained. The second fermentation, lasting at least three months, gives a fine and well integrated perlage. The names of the wines are a tribute to grandfather Henri's passion for his racehorses
