I Pastini

Pastinum in Latin was properly "hoe" and, in a derivative way, "land destined for the vine". So the hoe modeled the "cacalupo", the small earth dam necessary to collect the water of God, in this Apulia sitibonda, then as now. Putting "il pàstino", in this valley with a sweet profile, is an ancient and difficult art: planting in the stone the sapling vines of Verdeca, Bianco d'Alessano and Minutolo and waiting for brother sole to mature them slowly, it is the result of ancient experience. The winery "i Pàstini", located in the heart of the Valle d'Itria land, the land of the trulli, strives to maintain the wisdom of the traditions even with modern winemaking techniques, thus managing to obtain the best oenology Apulian knows how to produce. The "I Pàstini" winery was founded in 1996 and is located in the heart of the Itria Valley (the valley of the trulli) in Puglia. Taking advantage of the ancient winemaking traditions and with the help of modern winemaking techniques in order to obtain wines that express the new face of local viticulture. Managed by the Carparelli family on a 12-hectare vineyard with the aim of recovering and enhancing the indigenous grape varieties: Verdeca, Bianco d'Alessano and Minutolo, white berry varieties that confirm the ancient wine-growing vocation and the wines that they produce represent the authentic and genuine expression. The vineyards of "I Pàstini" all fall into the heart of a geographically more characterized area of ​​Puglia, the territory of the Itria Valley, more precisely between the municipalities of Locorotondo and Martina Franca. This area has always been particularly suited to the production of white grapes of the autochthonous varieties of Verdeca, Bianco d'Alessano and Minutolo of great quality. The vineyards: Cupa, Rampone and Faraone are located from north to south, therefore exposed to the sun, from sunrise to sunset, in a wide valley, located 350 meters away. s.l.m., observable from the hills of Martina Franca (431 m. s.l.m.) and Locorotondo (410 m. s.l.m.). The valley benefits from constant ventilation from the north, which mitigates the hot summer temperatures, ensuring a balanced daytime temperature range, such as to allow the excellent quality of the grapes. The uniform radiation at the right temperature range, constant ventilation, therefore, are the prerogatives that make these grapes perfectly healthy, enrich them with aromatic substances and masterfully give an excellent ratio between acidity and sugars. The mass selection, carried out flawlessly by highly qualified personnel in the native varieties of the Valle d'Itria, together with the particularly favorable pedo-climatic conditions, thus allows our company to vinify unique white grapes, which pour their exclusivity in the organoleptic characteristics of the wines, produced with the pride of the most authentic tradition.
