Vines Pinot Bianco ( %)

Color: Straw yellow.
Smell: The nose is fresh fruity with aromas of yellow apple and pear, mineral with hints of walnut and hay.
Taste: A lot of fruit also on the palate, savory with a well integrated acidity, long persistence.
Food pairing: Perfect for appetizers and fish and shellfish dishes, sushi and raw fish.

Age of vines: 10-30 years.
Yield/hectare: 60 hl.
Breeding system: Guyot.
Production area: Hilly vineyards with east exposure between 500 and 550 m above sea level. At the foot of the mendola there are optimal conditions of ripening of the grapes for particularly fruity and fresh wines: strong temperature range with hot days and cool nights, limestone-porphyritic clay soil.
Vinification: Soft pressing of the grapes, partly whole, partly destemmed and macerated. Decanting, slow fermentation at a controlled temperature of 16°C, aging on the fine lees in steel tanks (10% in large wooden barrels) for 5 months, filtering and bottling in March.
