Vines Chardonnay ( %)

Color: Straw yellow.
Smell: The nose is fruity, fruity, exotic with aromas of pineapple and mango; harmonic wood with light hints of vanilla
Taste: On the palate it is full-bodied, creamy, persistent with lots of fruit and length in the finish.
Food pairing: Perfect for appetizers and fish and shellfish dishes, sushi and raw fish.

Age of vines: 10-20 years.
Yield/hectare: 60 hl.
Breeding system: Guyot.
Production area: Hill with exposure between south and east between 350 and 450 m above sea level. Calcareous, clay-sandy soil; very windy area.
Vinification: Destemming of perfectly healthy ripe grapes, cold maceration for 10-18 hours, soft pressing, natural settling of the must, slow fermentation at controlled temperature of 18 °C.
Aging: 5 months on fine lees (50% in tonneau and large wooden barrels), filtration and bottling in March.
