Vinification: Destemming of perfectly healthy ripe grapes, cold maceration for 10-18 hours, soft pressing, natural settling of the must, slow fermentation at controlled temperature of 18 °C.
Aging: 5 months on fine lees (50% in tonneau and large wooden barrels), filtration and bottling in March.
