Vinification: After harvesting, de-stemming takes place, soft pressing, followed by fermentation in contact with the skin of each type of grape separately. Malolactic follows.
Aging: The wine is blended and aged in French barrique for 18 months before bottling.

Lo Zoccolaio

The Lo Zoccolaio farmhouse, which takes its name from the locality of the same name located in Bricco di Barolo, has 30 hectares of vineyards, 14 of which are cultivated with Nebbiolo grapes from Barolo. The vineyards are exposed to the southwest, on the Bricco Barolo coast which from the castle of Barolo goes up towards Monforte. The wines produced by this farm are real jewels, oenological masterpieces to be enjoyed to make every special moment unforgettable. In the Langa, on the hills of the right bank of the Tanaro river, every clod has borne fruit. Here wine is never a product, a commodity, a fashion. Each bottle contains the history of its people and its territory. In the Lo Zoccolaio farmhouse, a typical agricultural residence that owes its name to an ancient wooden shoe manufacturer residing there, this dialectic is deliberately highlighted, brought out. In the cellar we started with the "modernism" of the barrique to re-land with the use of larger woods, while the architectural choices of the recent renovation revisit the colors and materials of the territory with a decidedly current line, which harmonizes by contrast with the surrounding vineyards. Lo Zoccolaio understood how virtue lies in the middle, in the perfect balance between respect for tradition and its enrichment with innovation and freshness. Lo Zoccolaio produces exclusively red wines with grapes from its own vineyards located in Barolo, Monforte d'Alba, Novello and Verduno. Each stage of the creation of wine is followed with great passion and dedication. The grapes are treated with love and respect for the rhythms of nature is the guideline of the approach used. The harvest is done by hand, without haste, selecting the best bunches to be expressed in the bottle. From the soft pressing of the grapes, to the fermentation, to the refinement, up to the bottle, nothing is overlooked, everything takes place respecting tradition but with the most modern methods and tools. The exposure of the vineyards of the Lo Zoccolaio property is among the best in the area and is a fundamental requirement for vines such as the "Nebbiolo da Barolo", which is absolutely demanding in terms of soil and climatic exposure. The Lo Zoccolaio estate, in addition to the vineyards located in the municipality of Barolo, also includes the vineyards located in the locality of Ornate in Monforte d'Alba, the plots in the municipality of Verduno and in the locality of Ravera in Novello, where the homonymous and prestigious Ravera, black label. All the vineyards of the company draw the hills with a sublime harmony and, in addition to giving life to great grapes, they create a wonderful spectacle for the gaze of visitors.
