Color: Thick ruby red with purple reflections
Smell: the nose is broad with notes of mace, ginger and pepper followed by blackberry, morello cherry and hints of tobacco leaf and coffee.
Taste: the sip is vigorous with energetic and well integrated tannins, long persistence closes with a reference to menthol tobacco.
Food matches: Excellent with stewed game and grilled meats.
Vinification: The Negroamaro grapes after a natural drying on the plant are carefully selected and collected in boxes together with Montepulciano. They are then crushed and de-stemmed. The must undergoes alcoholic fermentation with maceration for at least 20 days at a controlled temperature of 26-28 °
Aging: 12 months in cement tanks, 12 months in barrique, 12 months in bottle
Marulli
The Marulli Winery was founded in 1975 in Copertino, an essentially agricultural center of Salento, but for two generations the family had grown vines and produced good wine. Today the company, still family run, has about 20 hectares of vineyards. The quality is the result of a blend of fine grapes (Chardonnay, Malvasia Nera di Lecce, Merlot, Cabernet Sauvignon, Montepulciano, Negroamaro, Primitivo and Syrah) transformed within their company into fruity and fragrant full-bodied rosy reds and delicate whites. The location of the land, the favorable climate, but above all the deep attachment to the land and the vine by the owner allow to obtain grapes of excellent quality. Even with the use of modern winemaking techniques, Marulli has maintained a spirit of traditional, scrupulous and attentive winemaker, lover of his work, with the constant intent of obtaining the maximum in terms of quality and therefore introducing wines for consumption both D.O.C. both to I.G.T. worthy of great consideration and considerable appreciation.
