Vines , Negroamaro

Color: Intense coral pink, brilliant.
Smell: Intense bouquet, memory of cherries and fresh fruit, delicate.
Taste: Soft, elegant and with a good persistence, fruity with a sapid flavor. It stands out for its singular taste and for the "compelling Mediterranean".
Food pairing: Excellent with tasty fish cuisine, stewed fish, white meats such as veal with tuna sauce, fresh cheeses, unseasoned pecorino.

Grapes: 90% Negroamaro and 10% Malvasia Nera Leccese. Cultivated with the traditional sapling system in the most typical area of ​​Salento and precisely in the municipalities of Tuglie, Sannicola, Alezio (LE).
Soil type: Clayey, medium-textured limestone.
Harvest: Early September.
Harvest type: Manual.
Vinification: Traditional Lacrima. The grapes are left to macerate for about 16 - 18 hours depending on the ripening and therefore the color.
At the moment of racking, only 25-30% maximum is destined for the production of Rosé "Mjère".
Exclusively the best part, the clear one with a coral pink color obtained from the Raised Hat, is destined for fermentation at a controlled temperature of approximately 18 ° C.
The duration of fermentation is approximately 7 - 8 days and once completed, the product is transferred to stainless steel tanks and left to rest on its lees for the right time.

Our vineyards, located in the most favorable areas of the municipalities of Tuglie, Alezio, Parabita and Sannicola, are soils with different characteristics but which give the wines incredibly varied nuances giving precious grapes that are carefully selected and "softly" pressed. The passion dedicated together with the love lavished in this ancient and yet so modern craft is immense. A job that must know how to combine the best traditions with new knowledge, be able to put together different vines by expertly calibrating them, so as to obtain a perfect product in terms of flavor, color and perfume.
