Franciacorta DOCG Extra Brut Demetra 2013 - Mirabella

Color: Gold, the most noble of colors.
Smell: Freshly baked bread and yeast mixed with yellow fruit and white flowers, with pleasant citrus notes.
Taste: Strong, dry, persistent, all combined with a feeling of great balance and elegance.
Food matches: Excellent as an aperitif, it goes well with rich appetizers based on salami and cheeses. Try it with a fish tempura.

Sinuous and sure, the bearing of a goddess. Delicate lips and sharp tongue, balances between grains of salt and white flower petals at the height of their splendor.

Yield: 75 quintals/hectare.
Harvest: Only bunches from vineyards older than 18 years, less productive and of higher quality. Millesimato dedicated to  Demeter, goddess of abundance, image and emblem of the company.
Vinification: Separate processing of the grapes with perfect ripeness, fermentation with selected yeasts in a cement tank at 18-20 °C. 25% of Chardonnay ferments in barrique, batonnage for 4-5 months.
Aging: On the lees for a minimum of 55 months and not less than 6 months before sale after disgorgement.
