Harvest and fermentation: The grapes are harvested by hand in small crates in the early morning and left to cool all night in the cold store.
The bunches are pressed in the traditional vertical press; the must is left to settle without the use of enzymes and subsequently fermented partly in 500 liter tonneaux and partly in steel. After seven months the wine is decanted with a light filtration and finally bottled.
