A blend of Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot, which combines immediate pleasantness and taste-olfactory complexity with a proven aging potential.






The 2017 vintage will remain in history as one of the hottest and driest. This could already be expected from a particularly mild winter with temperatures over three degrees above the seasonal average and with normal rains. As a result, the budding took place well in advance of almost two weeks. The vegetative cycle of the vineyards has been accompanied by hot weather with low rainfall since March, just interrupted by a sudden drop in temperatures in late April, which has brought frost to many areas of Tuscany. On the coast, thanks to the proximity of the sea, the temperatures remained above zero, without creating any damage to the growing shoots. Already since May the heat and drought have returned, limiting the vegetative development and the size of the bunches, despite the flowering taking place in excellent conditions. July and August were very hot and saw almost no rain, fortunately cooled by night temperatures. The harvest began early with the first Merlots on August 24, continuing until the last week of September in sunny and warm weather. In the middle of the month rains finally arrived to cool the temperature, creating excellent conditions for late vines.


The harvest was done by hand in 15 kg crates and the bunches were selected on a double sorting table before and after destemming and then subjected to a soft pressing. From 2016, in addition to manual selection, the optical one was introduced to further increase the quality of the selection. Each variety and parcel was vinified separately. Alcoholic fermentation took place in stainless steel vats at temperatures below 25 ° C for two weeks followed by maceration for about a week, in order not to exceed a total of three weeks in the tank. The malolactic fermentation began in steel vats, and ended after the transfer to barriques (25% new and 75% second passage). The wine remained in barriques in the Ornellaia cellar at controlled temperature for a period of about 15 months. After the first 12 months, the assembly was carried out and then reintroduced in the barriques where he spent another 3 months. The wine remains in the bottle six months before its introduction on the market.

The company's production philosophy focuses on one goal: quality. Each choice therefore takes on extreme importance and implies absolute attention to detail. No shortcuts are allowed at any stage of the production process: this is our way of working and this is how we manage to obtain the best grapes based on the climatic characteristics of each vintage. During the harvest, analyzes and empirical tests allow us to carefully choose the bunches to be harvested. The tasting of the grapes allows to better evaluate the maturation of the tannins and the balance of the bunches, to establish the best time for the harvest and the winemaking technique for the grapes of each plot. We subject the grapes to a double selection: a first sorting table for quality verification, then a second check for the removal of any residual vegetation. The grapes of each cru ferment separately, as each base wine contributes to the creation of the final blend, by virtue of the specific conditions of the vineyard of origin: combination of soil, climatic exposure and of course the type of grape variety. Only after a year of aging in cask are the base wines assembled in accordance with the two main criteria: the expression of elegance inherent in the spirit of Ornellaia and the style of the vintage.
