Vines Sauvignon Blanc ( %)

Color: Straw yellow.
Smell: The nose is rich and elegant with a note of peach, pear, citrus and white flowers.
Taste: On the palate it is medium-bodied, frescoed and balanced, mineral and of good length.
Food pairing: Perfect for first and second courses based on fish and shellfish, sushi, raw fish and fresh cheeses.

Soils: The terroirs are mixed; 50% limestone, 30% flint and 20% limestone clay. Each terroir is vinified separately in a thermoregulated stainless steel tank. Limestone brings minerality and finesse. Limestone clay enhances fruit and wealth. Flint provides structure and minerality.
Vinification: Each grape is selected during the harvest; Work by gravity to respect the natural flow of juice during the winemaking process. A light pressing is carried out to preserve the integrity of the fruit.

Pascal Jolivet

The Jolivet family has been active in the wine world since 1926, when it started its business as a negociant. We must wait for 1987 and the arrival of Pascal Jolivet to see the birth of the wines that bear his name. Pascal Jolivet immediately established himself as a dynamic and revolutionary exponent having decided to vinify exclusively his Sauvignon Blanc with indigenous yeasts to better express the typical varietal characteristics. In a short time, Pascal Jolivet wines established themselves on the international wine scene for their marked quality. Today the Pascal Jolivet winery covers 95 hectares of land in the villages of Sancerre and Pouilly Fumé and 50 hectares in the Touraine area for the production of Attitude wine. Since 2013 Pascal Jolivet has used the help of a young and talented winemaker of Friuli origin in the cellar, Valentina Buoso, expert in winemaking with indigenous yeasts and, with equal competence, in the processing of Sauvignon Blanc. Pascal Jolivet's company continues to work in the cellar in an extremely natural way, with very long fermentations and refinements sur lies that play a fundamental role in the concentration and complexity of the wines, characterizing them for purity and elegance.
