Color: Straw yellow with greenish reflections.
Smell: The nose is fine and delicate with notes of Mediterranean scrub, sage and thyme, notes of small wild pears and fresh grass.
Taste: On the palate it expresses a balance between acid and savory, juicy and persistent notes.
Food pairing: Excellent for appetizers based on fish and shellfish, sushi and delicate cold cuts.
The vineyards from which the white Mammamè is born are located in the Itria Valley area and more precisely in the karst depression called "Canale di Pirro".
A valley bordered on both sides by hills covered with woods and pastures.
Altitude: 270 m a.s.l.
Soil: Clayey, silty and calcareous.
Average density of plants per hectare: 4500/5500.
Average age of the vineyards: From 20 to 65 years.
Breeding system: Mixed Guyot.
Yield in grapes: 60-70 q.li/ha.
Harvest period: Third decade of September.
Harvest: Manual.
Vinification: The freshly picked grapes are cooled for 24 hours in a cold room. The following morning it is de-stemmed and, before the soft pressing, there is a 12-hour maceration in contact with the skins. After this period, the must is separated and left to settle in cold before being fermented at a temperature of about 18 degrees centigrade for 14/16 days.
After the alcoholic fermentation, the wine remains in contact with its lees until February. During this period periodic battonage is performed. Finally the wine is lightly filtered and bottled.

Pierfabio Mastronardi Vignaiolo
The Pierfabio Mastronardi Vignaiolo company was born in 2017 with the idea of making wine in an artisanal way, taking care of every little detail that is hidden behind every single bottle of wine produced. From the winter pruning of the vines to the packaging of the bottles, everything is followed with extreme care and dedication. The goal is to obtain sincere and representative wines of the tradition of the territory in which they are born. Great drinkability and pleasantness distinguish Mammamè, in all its interpretations: acidity and flavor are our distinctive characteristics. The company covers about 3 hectares. 2 hectares are cultivated in Primitivo and Aleatico, in the countryside of Castellana Grotte. Half a hectare of sixty-year-old primitive, cultivated with saplings, is located in the countryside of Acquaviva delle Fonti. Half a hectare is located in the Canale di Pirro, with classic grapes from the area, which has always been suited to white: Verdeca, Bianco d'Alessano, Falanghina and other typical varieties of the Itria Valley. Mammamè: dedicated to the nickname that has accompanied the Mastronardi family for three generations and to the agricultural heritage behind this highly desired project. A project, an idea, born to give voice to one of the oldest wine-growing areas in Italy.
