Color: The Brut Vintage 2012 boasts a delicate bright pale golden color. Its refined elegant bubbles give rise to a constant persistence underlined by a fine and regular foam.
Smell: Refined and subtle, the nose is full of freshness and opens up to the scent of white fruits (peach). The first aromas are reminiscent of dried fruit, followed by enticing notes of flowers, gingerbread and delicate spices that mix with the fragrances of Viennese sweets.
Taste: The mouth is characterized by a clean and decisive attack on freshness. It reveals a good balance between roundness and softness on a complex structure. The freshness of the citrus fragrances remains throughout the aftertaste and improves the aromatic range of spices and fresh white fruit (peach) already present on the nose.
Food pairings: The Brut Vintage 2012 enhances the refined dishes with a distinctive character, such as chicken with foie gras filling, capon with morel mushrooms, supreme chicken ..
La Cuvee
The Brut Vintage 2012 Champagne Pol Roger is produced from the traditional blen of the Maison 60% Pinot Noir and 40% Chardonnay from 20 Grands and Premiers crus vineyards of the Montagne de Reims and the Côte des Blancs.
Produced only in limited quantities, the Brut Vintage 2012 is aged 7 years on the lees.
Vinification and aging
The must undergoes two débourbages (settlements), one in the press room immediately after pressing and the second, a débourbage à froid, in stainless steel tanks at 6 ° C for a period of 24 hours. Slow cold fermentation with temperature kept below 18 ° C takes place in stainless steel with each variety and each village kept separate. The wine undergoes a complete malolactic fermentation before the final mixing. Secondary fermentation takes place in the bottle at 9 ° C in the deeper Pol Roger cellars (33 meters below street level) where the wine is stored until it is subjected to hand remuage (enigma), a rarity in Champagne at today. The very fine and persistent mousse for which Pol Roger is renowned owes much to these deep, fresh and moist cellars.
Pol Roger
Located in Epernay on the prestigious Avenue du Champagne, the Pol Roger is a sum of excellence: 90 hectares of vineyards, 7 km of premises at -33 meters above road level, an average temperature in the cellar of 9.5 ° C (the lowest in the territory) and 4 rémeurs authorized in the production team, are just some of the peculiarities that make this Maison extraordinary.
