Non-vintage Pol Roger has always been recognizable not only for the classic writing on the label, but also for the distinctive white capsule that defines its brand. The guiding principles of this cuvèe are the achievement of harmony and consistency. The "white capsule" blend is traditionally composed of about 30 base wines from different crus, vines and vintages. The "white capsule" is never sold before it has completed a minimum of 3 years of aging although the specification allows it to be sold after only 15 months. The "white capsule" is normally composed of wines from soft pressing, but when required, also from wines from second pressing which increase the proportion of tannins in the wine. After the clarification of the must at 8 ° C, the first fermentation is carried out at controlled temperature, in order to obtain and preserve fresh fruit aromas and flavors. The fermentation process takes place in tanks; Pol Roger believes that fermentation in wood involves the total disappearance of the primary aromas of the grape. The Pol Roger cellars, which extend for 7 km, are the coldest (at 9.5 ° C) and the deepest in Epernay; the deepest tunnel is in fact 33 m below the ground; this produces the perfect conditions for the second fermentation and aging on the lees: the resulting very fine foam is the characteristic of Pol Roger.
