Clou de girofle, the clove, is a strong spice with a penetrating, warm and rich aroma; the taste is both pungent and bitter. The spices tell of exotic aromas and flavors that can be traced many times to the characters and values of the wines, especially of this precious grape able to subtly mark its rosé and in a more suggestive way its great aged reds. The brand in question was chosen not only for the power it possesses, evocative of the fascinating qualities of spices, but above all because the author has always had the fixation of reaching the excellence of quality wine. Production area: the grapes come from the vineyards of the Copertino countryside
Training system: classic Apulian sapling and spurred cordon
Soil: various composition clays placed above the hard or tufaceous limestone, of medium fertility in the flat area: from 30 to
60 m a.s.l.
Harvest period: first or second decade of September, depending on the vintage
Vinification: the harvest of whole bunches is conditioned at a temperature of about 10 ° C before pressing.
The maceration of the harvest without stalks lasts about 24 hours. The thermal control of the fermenting must is regulated
at 15-16 ° C.
Aging: In steel, 3-4 months.
