Vines Negroamaro ( %)

Color: Intense color with purple reflections, tending towards garnet.

Smell: Nose rich in red fruit, licorice, plum, vanilla and spices

Training system: classic Apulian sapling
Soil: various composition clays placed above the hard or tufaceous limestone, of medium fertility in the flat area: from 30 to
60 m a.s.l.

Harvest period: the grapes are left on the vine until the harvest, which occurs late, around the second decade of the month
of October.

Vinification: maceration of the overripe grapes, almost dried, for at least 8 days with daily pumping over to facilitate the
extraction of the coloring substances.

Fermentation is subjected to a thermal control regime: max 26 ° C.
Maturation and aging: the wine ages in first and second level French wooden barrels for at least 10 months and is left to
age in the bottle for at least 18 months, before being released for consumption.
