Solouva Method: (Only grapes) The vinification is carried out without the use of exogenous sugar (cane sugar or beet) at any stage of the production process.
Instead of sucrose, the must - naturally rich in sugar - of the grapes themselves, harvested at full phenolic ripeness, is used both for the second fermentation and for the possible dosage syrup, respecting the integrity of the fruit and the enhancement of the territory.
This process brings to the wine fruity, fresh, juicy and savory sensory characteristics.

SoloUva

SoloUva is a small Franciacorta company that takes its name from the innovative method of producing wines with refermentation in the bottle. The more than 20,000 bottles produced by Andrea Rudelli and associates are in fact vinified without the use of exogenous sugar (cane sugar or beet) at any stage of the production process. Instead of sucrose, the must - naturally rich in sugar - of the grapes themselves, harvested at full phenolic ripeness, is used both for the second fermentation and for the possible dosage syrup, respecting the integrity of the fruit and the enhancement of the territory. This process brings to the wine fruity, fresh, juicy and savory sensory characteristics. This is how some of the most identifying and unsettling Franciacortas of recent years are born. The SoloUva vineyards are located in Adro and cover an area of 2 hectares.
