Smell: The nose is intense, pleasant with red berry fruits such as black cherry, raspberries, cranberries which are later found in the flavor.
Taste: On the palate it is fresh, savory, with a long and deep spicy aftertaste.
Food pairing: Perfect for dishes based on red and white meats, game, salami and cheeses.
Father of Pinot Blanc and Gray, Pinot Noir is probably the most prestigious variety in the world: the grapes of Burgundy and Champagne are born from its grapes. Versatile, it manages to blend elegance and aging ability together. In Trentino it is grown only in particularly suitable areas, given the low productivity linked to a difficult climate adaptability.
Production area: Trentino - Ciré di Pergine hilly areas (500 m).
Soil: Sandy gravel - South exposure.
Breeding system: Trentino pergola.
Harvest: Manual.
Vinification: Red fermentation in contact with the skins, followed by the subsequent malolactic fermentation in steel and then in the bottle for another 6 months.
Terre del Föhn
The company is located in Lavis, a pleasant village north of Trento, in the Trentino Alto Adige region. The Simoni family, with a wine tradition of over sixty years, aims to enhance, with its work, the characteristics of its land, using the cultivation practices in the vineyards that allow the vine to achieve a fundamental balance for the quality of the grapes. Also in the winemaking practices in the cellar, the Simoni family uses modern technologies in respect of Trentino oenology which boasts centuries of history obtaining a line of fine wines in the sign of local tradition and territorial specificity, which, appreciated and known, are distributed on the national market and international. The grapes for Terre del Föhn wines come from the vineyards, favorably exposed to the sun, of the Val di Cembra and from the hills above Lavis and Trento, as well as from Mezzocorona, Volano and Isera, in suitable areas and where the best environmental conditions are guaranteed for the cultivation of the vine. Thanks to the particular microclimate that is benevolently influenced by the influence of the Föhn, a hot and dry wind blowing in these lands, the vine finds a fertile place for the production of grapes with great potential. Throughout the year, the vineyards, partly owned and partly by carefully chosen winemakers, are the object of careful cultivation aimed at obtaining the maximum quality yield and preparing the vineyards at the most important, involving and demanding moment of the a producer: the harvest.
