Production: The grapes were harvested when they reached aromatic maturity and immediately mashed in the cellar. During soft pressing, a short maceration (2 h) takes place, after which the must is brought to a temperature of 10 °C for about 24 h to obtain a natural settling. The clarified must is fermented, with selected yeasts, in temperature-controlled stainless steel tanks at a temperature of 16 °C. This is followed by a short period of aging in steel "sur lies" (about 3 months) and aging in bottle (approx. 3 months).

The Apulian Fiano: In the Masseria Maìme estate there are two nearby plots: the Roy and, a smaller one, the Roycello. Both refer to the presence, in the 1930s and 1940s, of a wader (the Grus Grus) who preferred the wetland of the Bosco di Cerano and whose dialectal name, with an onomatopoeic influence, was Roy Il Roycello comes from grapes of the homonymous plot and reflects in the name as in style the strong territorial bond.

The Bocca di Lupo estate is located in the countryside of Minervino Murge, in the Castel del Monte DOC area, about 250 m above sea level. The proximity of the ancient Vulture volcano, the climate characterized by a significant temperature range between day and night and the composition of the land have a significant influence on the vineyards. The varieties present are Aglianico, Chardonnay, Cabernet Sauvignon, Apulian Fiano, Nero di Troia and Moscato Reale. Masseria Maime is located in one of the most beautiful areas of upper Salento. The company, which covers an area of ​​about 500 hectares of which 350 are planted with vines and 85 with olive groves, develops along the Adriatic coast, thus creating a unique landscape of vineyards that arise between woods and pine forests and are lost on sight an eye until it merges with the sea.
