PRODUCTION
The grapes were picked slightly overripe and vinified in thermo-conditioned stainless steel tanks. There maceration, carried
out at temperatures no higher than 26 ° C, was continued for 8-10 days. Malolactic fermentations were completed by the
beginning of winter. A period of further refinement then followed in steel (about 8 months) and in bottle (4 months).

Passion, courage and trust in Puglia's enormous quality potential are the elements that pushed the Antinori to invest in this region, in particular in the areas of Castel del Monte and Salento. The basic idea on which Tormaresca's production philosophy is based is to produce great wines from native Apulian vines. Most of the vineyards are cultivated with traditional grapes, some of which date back to the Magna Graecia civilization, and strongly rooted in the territory: Primitivo, Negroamaro, Fiano Pugliese, Aglianico, Nero di Troia and Moscato Reale The Tormaresca company consists of two estates located in the areas most suited to the wine-growing tradition of the region: Tenuta Bocca di Lupo in the DOC Castel del Monte, immersed in the wild Bari murgia and Masseria Maime in the Salento area, the beating heart of Puglia. The Bocca di Lupo estate is located in the countryside of Minervino Murge, in the Castel del Monte DOC area, about 250 m above sea level. The proximity of the ancient Vulture volcano, the climate characterized by a significant temperature range between day and night and the composition of the land have a significant influence on the vineyards. The varieties present are Aglianico, Chardonnay, Cabernet Sauvignon, Apulian Fiano, Nero di Troia and Moscato Reale. Masseria Maime is located in one of the most beautiful areas of upper Salento. The company, which covers an area of about 500 hectares of which 350 are planted with vines and 85 with olive groves, develops along the Adriatic coast, thus creating a unique landscape of vineyards that arise between woods and pine forests and are lost on sight an eye until it merges with the sea.
