Harvest: Harvested by hand in mid-September, early in the morning or late in the afternoon, in small boxes placed, before arriving in the cellar, in cold storage rooms.
Fermentation: A careful selection of the grapes allows to dedicate only the best bunches to the production of this wine. The soft pressing is followed by an immediate drop in temperature, to facilitate the settling and elimination of the suspended substances present in the must. Fermentation takes place in steel tanks at controlled temperature, between 13 and 15 ° C. The subsequent aging, which lasts until February of the year following the harvest, takes place in thermo-conditioned steel tanks, designed to guarantee a constant temperature of about 10 ° C necessary to preserve its aromatic heritage.
Historical notes: Ancient vine originating in the Adriatic. Its name seems to derive from the shape of the small, winged cluster, with fairly spherical berries, of an intense yellow color. Resembling a small sparrow.
