Vines Ribolla Gialla ( %)

Color: Straw yellow not intense, tending to greenish reflections.
Smell: The bouquet is pleasant, delicate but persuasive, with floral scents reminiscent of the woods, such as hawthorn and acacia, chestnut and oak flowers.
Fruity notes of golden apple, white peach, yellow plum, cedar peel and some nuances of honey are also perceived.
Taste: In the mouth it is very characteristic, fresh, dry, citrine, with medium alcohol content. It is characterized by a marked acidity, typical of the grape variety.
Citrus fruits and the final mineral component are well present.
Food pairing: Cold seafood appetizers, especially oysters, crustaceans and crudités, or even with white meats.

In 2007 the two brothers Gianni and Giorgio, current owners of the company, dedicated this wine to their father Adelchi. Thanks to all that he had left them: from the cellar to the vineyards, to the precious teachings, not only of the profession of winemaker. It is a heart wine which therefore represents the link and the passing of the baton from one generation to another of the Venica family.
The Ribolla Gialla grape, with a white berry, is autochthonous from Friuli and is characterized by its bunches which, at the moment of maturity, acquire a particularly warm and intense color, almost gold, from which the attribute "yellow" in the name itself derives of the variety.
It is a rather ancient vine with origins that are not well defined but still dated in Friuli-Venezia Giulia at the times of the XIII-XIV century.
Some argue that it was present in the region since Roman times, others say that this variety came from the Ionian Islands, passing through Dalmatia, then part of the Republic of Venice. The Ribolla Gialla vineyards are located within the DOC Collio territory.

Grape variety: Ribolla Gialla is produced in a DOC Collio grape variety. It is a white berried grape belonging to the typical autochthonous vines of the Friuli-Venezia Giulia Region.
Harvest: The grapes were harvested and de-stemmed between 21 and 26 September 2019.
Vinification: After harvesting the grapes are macerated for about 14 hours at a temperature of 10/12 °C in special containers, protected from oxygen with innovative systems by recycling their fermentation carbon, in order to reduce the intake of antioxidants.
Aging: The must ferments and ages on the lees for 5 months both in large wooden barrels of 20/27 hl (for 60%) and in steel containers for 40%.
Bottling: The wine was assembled and bottled at the full moons between the end of March and June 2020.

In synergy Gianni and Giorgio, they shed tradition in every small detail without ever underestimating the importance of evolution. Unprecedented solutions that identify with a new door [Porta di Gianni & Giorgio], a dynamic work of art, which in the simple operation of opening and closing stages a rhythmic dance of gears synchronized in the temporal flow of the eternal moment.
