Soil: Calcareous clay soils.

Density per hectare: 4500-5000 plants.
Breeding system: Guyot.
Vinification: Destemming and then soft pressing. Fermentation takes place in steel at a temperature that varies between 10-12 °C, very slow to maintain a fresh and intense fruit.
Halfway through fermentation, the tank is closed tightly to reabsorb a small amount of natural CO2.
Aging: This wine does not make malolactic fermentation and remains on the lees in a steel tank until bottling.
