Color: Pale straw yellow with greenish reflections.
Smell: Notes of yellow and ripe peaches are nectarines with hints of wild honey and lemon myrtle supported by freshly cut hay and cinnamon spices.
Taste: Layers of flavor built across the palate reflecting the fruit, natural fermentation and aging on yeast lees. The slightest hint of oak appears on the palate with cinnamon and spices, highlighting the complexity deriving from the reserve wine aged in cask. The balanced acidity gives the wine a refreshing finish.
Food pairing: To be enjoyed with shrimp and lemon couscous salad or chickpea, avocado, coriander and lime salad.

Winemaking and aging: Chardonnay comes from vineyards in South Australia, where access to the latest clonal versions and rootstock combinations continue to deliver exceptional fruit. The vinification is focused on a minimum intervention with the use of indigenous yeasts, malolactic fermentation, contact with the fine lees and in oak to give the Chardonnay depth, complexity and personality.

Yalumba - Oxford Landing

Yalumba is located near the town of Angaston, in South Australia, in the Barossa Valley region and was founded by Samuel Smith who, in 1849, planted his first vineyard and thus began the history of the winery. The name of the property derives from the term used by the Australian aborigines to define "all the land around". Today the winery continues to be family run and represents the oldest Australian winemaking reality. Yalumba is based in South Australia famous for having 18 wine regions recognized for the quality of the wines produced; the winery owns vineyards in most of these regions namely Adelaide Hills, Adelaide Plains, Coonawarra, Barossa, Langhorne Creek, McLaren Vale, Murray Darling, Riverland and Wrattonbully. Since 1990 the company has been working both in agriculture and in the wine sector following the dictates of organic production in order to preserve the great environmental and viticultural heritage of the property. The vineyards are mostly planted with Chardonnay, Sauvignon Blanc, Shiraz, Cabernet Sauvignon. Another decisive element aimed at implementing the quality of Yalumba wines is represented by the choice to use its own tonnellerie, an indication of the great research and attention paid by the company to the production of its wines.
